We have already experienced a similar situation, so we have prepared a little help for you – a vegetable and fruit dictionary.

In our blog we will introduce the foods that cause (more or less) problems for some of us. Since we love to cook healthily, so do we every time.
Prepare a healthy meal with the respective vegetables and provide you with the recipe. Many of us do not know that fruits and vegetables have “extra powers”. You are rich in Vitamins and minerals, protect against diseases e.g. from cancer, heart and circulatory diseases and have tremendous healing power.

Broccoli is a excellent example of this.

What do we know about broccoli?

Broccoli comes from Asia Minor, it became known in Italy and France and then it came to England and the USA as “Italian asparagus”. It grows and looks similar to a cauliflower, only the color is different. From deep green to blue-green (but you can also find purple, yellow and white varieties).

This is inside:

● Vitamins: A, C, E and folic acid
● Minerals: potassium, calcium, magnesium, phosphorus, protein, iron
● Secondary plant substances such as flavonoids
● Calories: 100g raw – 117 kcal, 100g cooked – 92 kcal

 

Broccoli has cancer-preventing and anti-tumor properties. You just have to prepare it properly. It is enough if it is blanched for 3-4 minutes in 76ºC, only then will it retain the sulforaphane, which is effective against cancer. But that is not all, there is still a lot in it. When we eat broccoli, we strengthen our immune system (antioxidants). It helps with anemia (iron), high blood pressure (potassium) and joint problems (vitamin C). Off to the kitchen! (H2)

Fresh broccoli is harvested from June to October, but the frozen version is just as healthy and tasty. Not only the “florets” are edible, you can also enjoy the leaves and stems.

Broccoli tastes the best raw with cream, sour milk or mayonnaise. You can also cook it – max. 6-10 minutes – but not longer, otherwise it will become too soft and lose its vitamins and minerals. You can make delicious cream soups from broccoli, and various casseroles are also recommended, e.g. B. Broccoli casserole with béchamel sauce, roasted almonds, pine nuts or nutmeg. Since broccoli causes gas, it should be seasoned with garlic, ginger, dill or caraway seeds.

We always recommend testing broccoli with the Greentest before cooking. These vegetables are often wrapped in foil, which creates nitrates during transport, which can be harmful to our health. After unpacking it is best to wash it with Washer, then we are sure that we have done everything correctly.

Broccoli balls

In summer you make a green cream soup out of broccoli, in autumn hearty casseroles, but this time we opted for something completely different – broccoli balls – an alternative to meatballs. You should eat as healthily as possible and avoid meat every now and then. Fried eggs are a good alternative to meat. It is quick to prepare these and you will be full of them. But even they get boring at some point … You need variety. We deliver these to you today in the form of broccoli balls 🙂 They are delicious, juicy, healthy and SUPER EASY TO PREPARE!

Ingredients:

  • 1 broccoli
  • 4-5 mushrooms
  • 1 medium onion
  • 1 medium carrot
  • 1 small leek
  • 2-3 tbsp grated cheese
  • 2 eggs
  • parsley
  • salt
  • pepper
  • paprika

Preparation:
Blanch broccoli and chop finely. Grate the mushrooms and carrots, chop the onion, leek and parsley. Put all ingredients in a bowl, season and form small balls out of the mixture. Heat the oven to 180ºC. Spread the balls on the baking paper, sprinkle with paprika and bake for about 25-30 minutes – until the balls turn golden brown.

Serve with garlic yogurt sauce or with tomato sauce. TIP: If you pay close attention to your weight, you can simply prepare the balls without cheese. They always taste wonderful.
